Saucy Asian Meatballs over Zoodles

INGREDIENTS

3 large Zucchini...julienned

For the Meatballs 2 lbs Ground Beef 1 cup Mushrooms...diced 1/2 cup Spring Onion...sliced thin 2 Eggs 3 Garlic Cloves...minced 2 tsp Ground Ginger 2 tsp Sesame Oil For the Sauce 1/2 cup Coconut Aminos 4 tbs Sunbutter 2 tbs Honey 2 tsp ground Ginger 2 tsp Sesame Oil 2 tsp Coconut Vinegar PREHEAT 400 In a large bowl mix all of the meatball ingredients together. Shape into 1 inch balls. Bake 15-20 minutes. Using a hand blender...mix all of the sauce ingredients together. Simmer on stove top about 5 minutes. Place your raw julienned zucchini onto plate. Top with meatballs and drizzle with desired amount of sauce.
