INGREDIENTS 2 White Sweet Potatoes...peeled 1 tbs & 2 tsp Butter. .. melted 1 tsp Coconut Oil 1 tsp Basil 3 tbs Almond Flour 3 tbs Grated Parmesan PREHEAT 400 Line baking sheet with parchment paper and set aside. Cut potatoes in half lengthwise. Cut each half into 1/4 inch thick slices, keeping slices together. With spatula, carefully place each half on baking sheet. Fan slices. In a cup combine 2tbs butter with the coconut oil and basil. Mix well and brush evenly over potatoes. Bake for 30 minutes. Meanwhile. .. combine almond flour, parmesan and 2 tsp butter. Mix well. Sprinkle almond mixture evenly over potatoes. Bake another 15 minutes or until browned and tender.
