Chunky Monkey Lara Bites

Ingredients 10 Medjool Dates. .. remove pits 2 Bananas. .. slightly green... sliced into coins 2 cups Cashews 1/2 cup Chocolate Chips 1/2 cup Walnuts 1/4 cup Unsweetened Shredded Coconut 1/4 cup Coconut Oil. .. melted 1/2 tsp Cinnamon 1/4 tsp Nutmeg 1/8 tsp Ground Cloves 1 tsp Vanilla 1/2 tsp Salt In food processor, grind Cashews into flour. Add dates, coconut oil, spices, vanilla and salt to bowl and blend until you get a dough consistency. Add bananas, chocolate chips, walnuts and coconut... pulse until well blended. Fill each muffin cup with a heaping 1/8 cup of batter. Flatten batter with the back of a spoon. I like to dip back of spoon in melted Coconut oil to prevent sticking to batter. Place in freezer for an hour before serving. Store in freezer.
