Eggs Benny over Fresh Baby Spinach

INGREDIENTS 8 Eggs 8 slices Ham/Canadian Bacon 2 handfuls Fresh Baby Spinach Hollandaise 4 tbs Coconut Vinegar 4 Egg Yolks 1/2 cup Ghee... melted 1 tbs Butter 8 Peppercorns 1 Bay Leaf 1 tbs Parsley Salt & Pepper to taste On a large griddle cook the ham 2 minutes per side. Cook eggs over easy/sunny side up or how you prefer. While eggs are cooking melt tbs butter in separate skillet and cook spinach just until it starts to wilt. Remove from heat and plate, topping with ham and eggs. For the Hollandaise Sauce Bring vinegar, bay leaf and peppercorns to a boil. Reduce heat and simmer to reduce about a tablespoon. Place the yolks in a blender, turn on and add the reduced vinegar through feeder tube and blend about 10 seconds. With the blender still on slowly pour ghee through feeder tube. Add parsley and season with salt and pepper. Serve immediately.
