Grilled Artichokes with Bacon and Scallion Dip

INGREDIENTS 4 medium Artichokes ½ lb Bacon…cooked and crumbled 1 cup Mayonnaise ¼ cup refrigerated Coconut Milk…solid cream only 2 Lemons 1 tbs Scallions…sliced thin 1 tbs Bacon Fat 1 tbs Olive Oil Make your dip by combining mayo, coconut milk, and bacon fat with a hand mixer. (I used my immersion blender) Then fold in the bacon and scallions. Chill dip in refrigerator. Fill bottom of large saucepan with water about 1 inch deep. Slice the lemons into wedges and place into water. Bring to a boil. Meanwhile, cut a ½ inch off the top of the artichokes and trim the tip of each leaf with kitchen sheers. Place the artichokes into boiling water, cover and cook for 15 minutes. Carefully remove artichokes and place into a strainer. When artichokes are cool enough to handle, cut them in half lengthwise and scrape out the fuzzy heart and thorny leaves. Lightly baste artichokes with oil and grill on medium flame cut side down for 5 minutes or until tender. Serve with dip.
