Spinach Mushroom Onion Quiche with Sweet Potato Crust

INGREDIENTS 8 Eggs 1 small Sweet Potato…sliced thin with a mandolin 1 small Onion…sliced ½ cup Chopped Mushrooms 2 loose handfuls of fresh Spinach 2 tbs Coconut Oil 1 tbs Fresh Basil…chopped ½ tbs Adobo Seasoning Salt and Pepper PREHEAT 425 Heat coconut oil in skillet and sauté mushroom and onions with salt and pepper until onions are translucent and shrooms are tender. Add spinach to pan and continue to cook until wilted. Layer the bottom of a greased 9 inch pie plate with the sweet potato slices. Place the spinach mixture on top of the sweet potatoes. Whisk eggs, basil and adobo together until yolks are well blended. Pour on top of veggies. Bake for 20 minutes or until cooked through.
