Spinach Rolled Flank Steak

INGREDIENTS 2 lb Flank Steak 1/2 lb Bacon. .. diced 1 cup Mushrooms. .. chopped 6 oz Baby Spinach 1 tbs Parsley 2 Garlic Cloves. .. minced Salt and Pepper to taste Preheat 400 In ovenproof skillet. ..Fry Bacon until crisp. .. remove from skillet, along with all but 2 tbs Bacon Fat. In same pan, saute shrooms and seasonings until heated through. Toss the spinach into the skillet and stir together just until spinach is wilted. Lay flank down and spread spinach mixture evenly onto the steak. Roll and tie with kitchen twine. In the same skillet, (add more fat if needed) sear all sides of steak before tossing into the oven for 25 minutes or until internal temp is 120 (for medium rare) Let rest for 15 minutes before serving.
