Coconut Shrimp Poppers

INGREDIENTS makes 4 dozen 2 lb Shrimp... peeled and deveined 2 cups Shredded Unsweetened Coconut 2 Eggs 2 tbs Honey 1 tbs grated Lemon Rind 1 tbs Spring Onion...chopped thin 1/4 tsp Cayenne 1/4 cup Coconut Oil Preheat 425 Mince shrimp in food processor. Whisk eggs and honey together. In large bowl, toss together coconut, lemon rind, spring onion and Cayenne. Add shrimp and eggs and mix well. Form into one inch balls. In a large oven proof skillet over medium heat fry the balls in coconut oil. .. rolling occasionally so they brown evenly. Cook for about 6 minutes. Finish off in the oven for an additional 10 minutes or until cooked through. Serve with Honey Orange Sauce 1/4 cup Honey 1 1/2 tsp Orange Juice 1/8 tsp Cayenne Blend all together.
