Fire Roasted Pesto Chicken (Primal)

INGREDIENTS 2 Chicken Breasts...sliced in half lengthwise (4 thin breasts) 1 cup Mozzarella Cheese (grass fed, organic) 1/2 cup Basil Pesto 14 oz Fire Roasted Tomatoes Salt and Pepper PREHEAT 425 Place chicken breasts into glass baking dish and season with salt and pepper. Spread 2 tbs of pesto onto each breast. Top with tomatoes (more or less to your liking) and cover each breast with 1/4 cup of cheese. Bake for 20 minutes or until cheese is melted and chicken is cooked through. Serve over spaghetti squash or your favorite zoodles. Use juices in dish to drizzle over your meal.
