Apple Spiced Tenderloin

Ingredients 2-3 lb Pork Tenderloin 4 Apples. .. peeled cored and sliced 1 lg Onion. .. chopped 1/3 cup Tapioca Flour 2 tsp Apple Pie Spice. ..divided 1 tsp Salt 1/2 tsp Pepper 1 tsp Thyme 3 tbs Coconut Oil 2 tbsp Apple Cider Vinegar 2 tbsp Kerrygold Butter PREHEAT 425 Mix together tapioca, salt, pepper and 1 tsp of apple pie spice. Dredge tenderloin in tapioca mixture. In oven proof skillet. .. sear tenderloin in coconut oil on all sides until golden. .. about 2 minutes per side. Remove from pan and set aside. In same pan add butter and saute apples and onion with thyme and remaining apple pie spice until onions are translucent. Add apple cider vinegar and mix well. Place tenderloin on top of apple mixture and bake for 20 minutes or until pork reaches internal temp of 145/150. Let rest 5 minutes before serving.
