Beef and Veggie Stir-Fry over CauliRice


INGREDIENTS 1-2 lbs Stir Fry Steak...thinly sliced 1 medium sized head Broccoli…broken into small florets 1 medium sized head Cauliflower…riced 1 Red Bell Pepper…sliced 3 Spring Onions…sliced thin 1/2 cup Coconut Aminos 1/4 Sesame Oil 2 tbs Coconut Oil 2 Garlic Cloves…minced 1 thumb-sized piece Fresh Ginger… peeled and finely sliced 1 bunch Fresh Coriander…chopped Crushed Red Pepper Juice of ½ a Lime Heat wok until very hot, add a tablespoon of coconut oil and stir fry the beef with garlic and ginger until just cooked. Add the aminos, sesame oil and lime juice. Cook for another 30 seconds and empty entire pan into a bowl, set aside. Return wok to stove and add another tablespoon of oil. Add red ebll and broccoli to the pan and cook until tender-crisp. Toss the cauliflower rice into the wok and continue to cook until rice is heated…about 2 minutes. Plate your rice and veggies, return beef and juices to the wok, along with spring onions and coriander, and stir fry until heated through. Arrange beef mixture on top of rice and veggies. Sprinkle with crushed red pepper.
