Blueberry Lemony Zest Ice Cream

INGREDIENTS 2 cans Full Fat Coconut Milk 1½ cup Blueberries…pureed in blender ½ cup Honey Zest of One Lemon 1 tsp Vanilla In a saucepan over medium heat, whisk coconut milk and honey until it comes to a boil. Remove from heat and stir in blueberries and vanilla. Refrigerate at least 8 hours. Pour mixture into the bowl of your ice cream machine and mix according to the manufacturer’s instructions. Add lemon zest once the ice cream starts to thicken. Eat ice cream immediately (it will be somewhat soft) or transfer to a container and freeze until ready to consume. Thaw for about 10 minutes before serving.
