Cherry Almond Chocolate Chip Ice Cream

INGREDIENTS 2 cans Full Fat Coconut Milk 1 cup frozen Dark Cherries…chopped ½ cup Honey ½ cup Enjoy Life Chocolate Chips 1 tsp Almond Extract In a saucepan over medium heat, whisk coconut milk and honey until warm and honey is melted. Remove from heat and stir in cherries and almond extract. Refrigerate at least 8 hours. Pour mixture into the bowl of your ice cream machine and mix according to the manufacturer’s instructions. Add chocolate chips once the ice cream starts to thicken. (I added chips into ice cream maker 10 minutes after starting machine) Eat ice cream immediately (it will be somewhat soft) or transfer to a container and freeze until ready to consume. Thaw for about 10 minutes before serving.
