Eggs In Purgatory

INGREDIENTS 5 Eggs 1/4 lb Bacon...chopped 1/2 Red Bell Pepper...sliced thin 1/2 Sweet Onion...sliced thin 1 14oz can Fire Roasted Tomatoes 2 Garlic Cloves...minced 1 tsp Cumin 1 tsp Smoked Paprika 1/8 tsp Cayenne Fresh Cilantro Salt and Pepper Preheat oven 375 In a medium sized oven proof skillet, cook bacon until crisp. Remove with slotted spoon and set aside. Leave about a tablespoon of fat in pan (saving remainder of fat for another recipe) Add peppers and onions to skillet and cook slowly until they begin to caramelize, about 20 minutes. Next add the tomatoes with juices, garlic, cumin, paprika and cayenne. Cook for an additional 2 minutes. Gently crack eggs over the tomatoes, and season with salt and pepper. Transfer skillet to oven and bake for 7-9 minutes, or until the eggs are set. Sprinkle with crumbled bacon and cilantro.
