Mint Chocolate Chip Ice Cream

INGREDIENTS 2 cans Full Fat Coconut Milk 1 cup Fresh Mint Leaves ½ cup Honey ½ cup Enjoy Life Chocolate Chips 1 tsp Vanilla Extract In a saucepan over medium heat, whisk coconut milk, honey and mint leaves until mixture comes to a boil. Remove from heat and stir in vanilla extract. Refrigerate at least 8 hours. Pour mixture through a strainer, removing the mint leaves, into the bowl of your ice cream machine. Mix according to the manufacturer’s instructions. Add chocolate chips once the ice cream starts to thicken. (I added chips into ice cream maker 10 minutes after starting machine) Eat ice cream immediately (it will be somewhat soft) or transfer to a container and freeze until ready to consume. Thaw for about 10 minutes before serving.
