Smokey BBQ Meatloaf

For Meatloaf 2 lbs Ground Beef 1 Red Bell…chopped 1 med Onion…chopped 2 Garlic Cloves…minced 2 Eggs 8 oz Mushrooms…pulsed in food processor until minced 2 tbs Garlic Powder 2 tbs Onion Powder For BBQ Sauce 6 oz Tomato Paste 2 tbs Coconut Vinegar 1 Garlic Clove…pressed 1/3 cup Chicken Broth 2 tsp Ground Mustard 1/8 tsp Cloves ½ tsp Allspice ½ tsp Pepper 1 tsp Salt 1 tsp Smoked Paprika 1 tsp Liquid Smoke 1 tsp Baking Soda Preheat Oven 400 In a large bowl mix all meatloaf ingredients together. Shape mixture into long loaf in glass dish or use loaf pan. Bake for 45 minutes. Meanwhile, in small saucepan, mix all BBQ sauce ingredients together and cook on low heat for about 10 minutes, stirring often. Once meatloaf timer goes off…top with a couple tablespoons of BBQ sauce and bake for an additional 5-10 minutes. Store any leftover BBQ Sauce in air tight container in fridge.
