Spicy Orange Shrimp with Basil Dip


INGREDIENTS 1 lb Shrimp...peeled and deveined 1 Orange...using only half 1 tbs Coconut Oil...melted 1 Garlic Clove...minced 1/2 tsp Crushed Red Pepper Flakes 1/2 tsp Salt 1/2 cup Mayonnaise 1/2 cup fresh Basil Mix mayo, basil and one teaspoon of juice from the orange with food processor until smooth and creamy. Let chill in refrigerator. Grate the peel off half the orange into a bowl. Slice the orange in half and squeeze only the juice from half the orange into the bowl with the grated peel. Add shrimp, oil, garlic, red pepper, and salt. Mix well and let sit 20 minutes. Remove shrimp with slotted spoon onto a cookie sheet. Place under broiler for 3-5 minutes or until shrimp is pink and cooked through. Serve with basil dip.
