Sweet Potato Gravy

INGREDIENTS 2 cups Bone Broth 1 Sweet Potato 1 Onion…chopped 2 tbs Bacon Fat…or fat of choice 2 Cloves Garlic…minced 1 tsp Thyme Salt and Pepper Peel and cut sweet potato into ½ inch chunks and cook in microwave until soft. Melt fat and add onion, garlic, sweet potato and thyme. Season with salt and pepper and sauté until onions are translucent, about 5 minutes. Add broth to pot and cook for an additional 5 minutes or until heated through. Remove from heat. Use an immersion blender to blend all ingredients until gravy forms. Serve hot.
