Fried Cauli~Rice


Fried Cauli Rice INGREDIENTS 1 Cauliflower Head 2 Eggs...whisked... 1 large Carrot...peeled and chopped 1/2 lb Bacon...chopped 1/2 cup Peas (fresh or frozen) 1/2 inch chunk of Fresh Ginger 3 Garlic Cloves 2 Spring Onions 3 tbs Coconut Aminos Cut the cauliflower into florets and pulse in a food processor until it breaks down into rice-sized pieces. Transfer to bowl and set aside. Cook the bacon in a large skillet over medium heat until crispy. Remove with slotted spoon and set aside. Drain all but a tablespoon of bacon fat from pan, saving for future recipes. Pour eggs into skillet and scramble as they cook. When eggs are firm, chop into small pieces, remove from pan and set aside. Place carrots, garlic and ginger into food processor and pulse until minced. Transfer to the skillet and cook until tender-crisp and fragrant. Stir in the peas and cauliflower. Cover with lid and cook for about 5 minutes, or until cauliflower is tender. Remove skillet from heat and stir in the bacon, eggs, spring onions and aminos. Serve immediately.
