Roasted Red Pepper Soup

INGREDIENTS 30 oz Roasted Red Peppers...chopped 2 cups Bone Broth (chicken) 1 cup Coconut Milk 1 lg Sweet Onion. ..chopped 2 Garlic Cloves. ..minced 2 tbs Tomato Paste 1 tbs Butter/Ghee 1 tbs Fresh Basil...chopped 1 tsp Salt 1 tsp Honey

In a large stock pot, melt butter and sauté onion until translucent. Add garlic and cook a minute longer. Add peppers, broth and salt to the pot. Lower heat and simmer for 20 minutes.

Remove from heat,add tomato paste, coconut milk, honey and basil and with an immersion blender or food processor, blend until smooth.

Whole30: omit honey
