I seriously think I have THE best Mayonnaise out there! It's thick, creamy and delicious, and it only takes 30 seconds to make. If you have a hard time getting a hold of Coconut Vinegar, you can use Apple Cider Vinegar. Store in the fridge in an air tight container. This should last as long as the expiration date on your egg carton. Enjoy!

Renee's Mayonnaise
2 Cups Olive Oil 2 Eggs...room temperature 1 tbs Coconut Vinegar 2 tsp Mustard 1 tsp Honey 1 tsp Salt
Combine eggs, vinegar, mustard, honey and salt with immersion blender. Add oil while blender is running, mixing until a mayonnaise has formed and ingredients are well blended. Store in fridge.
