Renee's Mayonnaise 2 cups Olive Oil (I use Filippo Berio) 2 Eggs. .. room temp 1 tbs Coconut Vinegar 2 tsp Mustard 1 tsp Salt With an immersion blender, mix eggs, vinegar, mustard and salt until well blended. With immersion blender running, slowly pour oil into mixture, mixing with an up and down motion. Refrigerate. Will keep for 2 weeks or until eggs expire.
