Sweet Potato Spinach Hash (Whole30)

INGREDIENTS 1 Sweet Potato...peeled, 1/4 chunks 1/2 lb Bacon (sugar free)...chopped 1/2 cup Red Onion...diced 4 cups Spinach Salt and Pepper Brown bacon until crisp. Saving fat in skillet, remove bacon with slotted spoon, set aside. Toss in the sweet potato chunks and onions, season with salt and pepper. Cook covered for 10 minutes, stirring occasionally, until fork tender. Add the spinach and cooked bacon to the skillet and continue to cook until spinach is wilted. Serve with an egg on top or as a side. This made about 3 servings.
