Bacon Ribbed Sweet Potato

INGREDIENTS

1 large Sweet Potato...peeled 2 slices Bacon...cut into 2 inch strips (width of potato) 1 tbs Butter...melted seasonings of choice...get fancy! PREHEAT 425 Soften potatoes in microwave about five minutes (or boiling water) just so easy to fan with a knife. Slice the potatoes about 1/8th to 1/4 inch apart, stopping at about 2/3 of the way down. Carefully place a slice of bacon into each slice. Baste potato with butter and sprinkle with seasonings. Bake 50 minutes or until potato are cooked through.
