Crispy Caveman Fries

Ingredients 1 lg Sweet Potato or Yam 2 tbsp Coconut Oil...melted 2 tbsp Tapioca Flour 2 tbsp Salt 1/2 tbsp Pepper 1/2 tbsp Garlic Powder Preheat oven to 450 Mix salt, pepper and garlic powder in small bowl. Peel and cut potatoes into 1/2 inch fries...place into large bowl. Toss in tapioca flour and toss until fries are covered. Let sit for 10 minutes. Drizzle coconut oil over fries and toss. Next add 1/2 tbs of the seasoning and toss until all fries are coated well. (Save remaining seasoning for future recipes) Place fries onto a baking sheet lined with parchment paper...make sure to space them out so they are not over crowded or they will not crisp. Bake for 15 minutes...flip fries...and bake for an additional 15. Serve with your favorite Paleo Ketchup...or if you're like me...Mayo!
