Primal Squash Bake


INGREDIENTS 1 lb Zucchini 1 lb Summer Squash 1/4 cup Coconut Oil...melted 1/2 cup Parmesan Cheese 1/3 cup Almond Flour 2 tbs Butter...melted 1/2 tsp Salt 1/4 tsp Pepper Preheat 350 Cut veggies into 1/4 inch rounds and toss with coconut oil. Place into a pie plate. In a small bowl bowl mix remaining ingredients together. Sprinkle the mixture over the squash (it may see like a lot, trust me, it's perfect!) Shake the plate, just a little, for some of the mixture to fall between the cracks of the veggies. Drizzle melted butter onto the almond four mixture, cover with tin foil and bake for 30 minutes. Remove foil and bake an additional 10 minutes or until top is golden.
